Seasonal Recipe - Fall
Frecon Farms’ Acorn Squash and Apple Soup
(Serve this soup with one of our hard ciders!)
2 lb. acorn squash, whole
3 apples, peeled, sliced and cored
2 ½ Tb. butter, divided
1 tsp. granulated sugar
1 large onion, sliced
2 tbsp. brown sugar,
½ tsp. ground ginger
½ tsp. ground coriander
½ tsp. ground cardamom
¼ tsp. ground nutmeg
9 C. good quality chicken broth
salt and pepper to taste
Roast acorn squash in preheated 400 oven until it can be pierced easily with a fork (approx. 40 mins). When cool enough to handle, remove the skin and seeds. Coarsely dice pulp and set aside.
In a medium skillet, melt 1 Tb.butter. Add apples and saute until they are lightly browned. Add granulated sugar and continue to saute until apples are caramelized and browned. Set aside.
In a large pot, melt 1 ½ tb. butter. Add onion and saute until soft and light brown. Add 2 brown sugar, ginger, coriander, cardamom and nutmeg. Saute for 2 minutes, stirring to prevent burning. Add the roasted squash and chicken broth. Stir to combine. Bring to boil, then reduce heat, simmer for 20 minutes.
Add the sauted apples and continue to simmer for an additional 15 minutes. Transfer to blender in batches to puree. Return soup to saucepan and season to taste with salt and pepper. Makes 10-12 servings.
Mrs. Frecon's Apple Cake
Coat a 9.5" baking pan with cooking spray, preheat oven to 350 degrees
In a large mixing bowl combine:
- 2 cups granulated sugar (or substitute 1 cup of honey)
- 1/4 cup cooking oil (or substitute 3/4 cup applesauce)
- 3 eggs (or substitute Egg Beaters)
In a separate mixing bowl stir together:
- 3 cups flour
- 1 tsp salt
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1 tsp. cinnamon
Add the dry ingredients and vanilla to the large mixing bowl. Stir in approxiamately 3 cups fresh, chopped or diced, FRECON APPLES. If the batter is too stiff. thin with a little apple cider. You may also add some chopped nuts and/or raisins.
Pour the batter into your prepared baking pan and bake at 350 degrees for approxiamately 40-45 minutes. You will know when the cake is done if you insert a toothpick and it comes out clean.
If you wish to add topping try...
- Sprinkle top with powdered sugar
- While the cake is still warm, spread with apple jam to make glaze
- Spread top with caramel topping
Jenny Frecon's Sauteed Apples
- Slice & core blend of sweet and tart apples, about 10 -12.
- Melt a 1 tsp pad of butter in skillet or frying pan.
- Toss apples in, stirring to coat, cooking till slightly soft.
- Drizzle with maple syrup & honey to taste.
- Sprinkle with cinnamon sugar to serve.
